I like anime, but I probably don't watch as much as I would like. Over the years I've watched Full Met al Alchemist (My favorite), Attack on Titan, most of Naruto/Naruto Shippuden, and started Death Note (only watched a few episodes). I'll take any other suggestions and add them to my list.

My favourite anime (as a catholic ofc) is Naruto because of its themes on forgiveness and ending a perpetuating cycle of hatred. Its amazing to see catholic virtues be present in a culture completely uninspired by christian belief, and is proof that God's beauty is visible for all to see, believer or not.
